This summer we invite you to join us at one of our culinary retreats, hosted at Il Casale Denari, a 15th century converted Augustinian convent. These retreats celebrate the season’s bounty, set within a breathtaking opulent location.
In June, we are joined by Avinash, the head chef of Pali Hill in Fitzrovia.The first night will play host to Avi’s Indian heritage, with a candle lit feast, where as the rest of the weekend will play homage to all things Italian. On Saturday wake to yoga and meditation before joining Avi in the kitchen, learn his secrets and taste his creations. Avinash will guide guests through an extensive pasta and risotto master class, after which we will all come together to enjoy what we have made and bask in the sunshine. In the afternoon head out on a nature walk, enjoy the local village, jump in the pool or head up to the spa, tucked away in the convents rafters, for a deep tissue massage. On Sunday the flower studio will open its doors for our guests to make their own bouquet ready to take home, before our farewell lunch.
About Avi : Avinash first cut his teeth in the world of hospitality at the Oberoi Hotel in Bangalore, before turning towards European cooking. He made his name at London’s most famous Italian restaurant, The River Cafe, each year they would head into the Tuscan hills for workshops and tastings. Avi was surprised at the similarities between the vibrant Indian and Italian cuisines, even how they dramatically change regionally. After a decade at The River Cafe, Avi opened his own venture in Fitzrovia, Pali Hill. Here he celebrates the British seasons and produce, with all the complexities and flavours of India. On the evening guests arrive, dinner will be reminiscent of the dishes Avi produces for Pali Hill, before moving into recipes more inspired by his love of Italy and our surroundings.
